Squeaky Cheese

A friend of mine told me about a cheese her grandmother used to make called squeaky cheese or basket cheese. I had never heard of it, it seems to be more on the east coast.  Has anyone ever made this cheese or have a working recipe on hand? I’d like to try it, it sounds good.

My friend swears its Italian in origin, but info on the web suggests the Italians got it from Finland. I’ve also seen it called Halloumi, indigenous to Cyprus.

Could it be Leipajuusto?  It’s sometimes called “squeaky cheese.”  I would be glad to give you a recipe I have.  I have not tried it, but it sounds delicioso!

Yes, I’ve seen it called that, as well as juustoleipƤ and Juusota. I’m sure its all the same. I’d love to take a look at your recipe to compare to the others I’ve found.

Halloumi is available in the Italian centers, its a mozzarella, bought some a month ago, dont recall it squeaking though, tasted like real good mozza.

I got the recipe from New England Cheesemaking Supply website, under their recipes tab.  I’m sure you know, but it’s cheesemaking.com.

Like I said, I haven’t tried it, so if you do, let us know how it turns out.  It sounds good, I just haven’t taken the time to make it.

My mom, and Italian from the mid-west swore just about everything was Italian in origin (even St Patrick believe it or not)... that said we used to eat “squeaky cheese” growing up..I think it’s this..  http://www.essortment.com/food/squeakycheesec_scbs.htm
