ur room is so dry, drying out so fast makes the cheese to cracked, put it in a pot with slightly open cover, so it dried slowly, and the cheese will stop craking..
in case u just take out of mold, and craked, u repress it, and do the above method and u will be fine
if it;s been long time (over 2 hours out of press) no need to repress, just do the pot thing
