I read here that you don’t wax jack cheese. I read elsewhere that you can brush it with olive oil, and I’ve done that but it still gets a good amount of mold on it. Is it bad to wax them or is there another way to let them age without having to clean them up every week? I keep them at RT ~60F and in the fridge ~40F.
