Nabil, thanks for the insight.  I will keep that in mind.  I am doing a 2 gallon batch of Colby this evening.  Hope that all goes well.  I am using buttermilk starter, as I have just about enough left for this batch.

I just got my dry starters from Leeners and will start culturing after Neils recommendation for the following batches.
