Stilton mould

I’m thinking about trying my first Stilton and am wondering what style of cheese mould I need to use. I’ve noticed that the Camembert moulds are tall like I’d need for Stilton. What’s everyone out there using?

I posted my new form I did a while ago. basically i recommend using a tall cylinder that way u can flip it regularly and have enough room so it can compress naturaly, that way its got lots of air pockets for the mold to form and dont need to needle it (at least I dont) Good luck smile

I made my first Stilton with a springform pan, thanks to the Neil’s web site. It was too short really but fine for my first Stilton. Now for Stiltons I use a 7 inch diameter perforated plastic Tomme mold that is about 5 inches tall and happens to have a bottom (I use it for everything!). It has a follower. Even taller would be better though.

Thanks for your replies. I found a tall stainless steel mould on the New England Cheesemaking site that looks nice. A little spendy though. I too use my Tomme mold for pretty much everything. I do want to invest in some small goat cheese molds and one for Stilton.
