I got a crockpot for the wax.  It’s always there, and easy to heat.  Also, it’s deep enough to dip a two-pound wheel almost completely.

I’m going to try the Caerphilly tomorrow.  Sounds tasty!

Yes this does sound intriguing.  I’ll be trying it in the near future too; but I have a date with a Swiss this weekend since I have access to some fresh goat’s milk.  Let us know how it turns out.  Just want to confirm one thing.  The curd is only cooked at a 2 degree temp. rise?  From 90 to 92 degrees?

Yes, 2 degree rise is correct to cook.
