turkey/spinach/feta meatballs

I’ve been making these meatballs for a couple of years, and couldn’t wait to try them with home-made feta.  Tonight I made a batch using a feta I made last month and some spinach I had frozen from the garden this spring.  Delicious!  The only thing I’ll do differently is to flavor the feta next time with sun-dried tomatos and garlic.  Yum!

Neil, I’m going to start a recipes category in the wiki. I’ve got a few great ones too. And, that would be a good place to put them where we can find them easily.

1 lb. ground turkey
1 c. feta cheese
16-oz frozen spinach, thawed and squeezed-drained
1 onion, grated
1 T. grill seasoning (I use McCormick’s Grill Mates Roasted Garlic & Herb)

Mix all together.  Form into small meatballs.  Drizzle with olive oil.  Bake at 400 for 30 minutes.

Sauce:

1 1/2 c. plain yogurt
1 t. ground coriander
1 t. cumin
1 t. dill
1 t. salt
juice of 1/2 lemon
1/4 grated cucumber

Place all in blender until smooth.

Serve the sauce over the meatballs.  We usually have flatbread with this meal, as well as hummus and tabouli.

The Wiki Site

I envisioned the wiki site being a place where we could “archive” the best of this forum including resources, recipes, techniques, etc. So, this forum would be for discussion, asking questions, etc. but the wiki could then be a repository for the best of what we learn here.

Wiki sites are a bit “different”, though. They are web sites that are maintained by the community. One member can add to, or modify another member’s contributions. They are a community publishing tool. The most famous is the online encyclopedia “wikipedia”.

If you are interested, by all means dig in and learn to use the wiki—there is a help file. If not, don’t worry about it, I’ll probably keep moving some stuff from here to the wiki over time.

Anyway, welcome aboard!
