Stirred Curd assessment

Just finished eating my first stirred curd cheddar.  It was aged two months, and it was phenomenal.  Great texture, not too dry, just the right zing, and it even melted.  That recipe is definitely a keeper.  A note:  cheese is definitely better when warmed to room temp before eating.

LOL, yes even if its slowly melted (non stick pan on min so its not cooked) and pored over bread/chips smile

Congrats on the success of your cheese.  My caerphilly is about 5 weeks old now, so I’ll have to crack it open and see how it has turned out.  I will keep you posted.
