Colby mistake

A couple months ago I made a colby and washed it at 77 degrees.  I was looking for a moister cheese.  Well, when my cave got overcrowded, I stacked another wheel on top of the colby.  The colby was soft, so it ended up getting squashed with the wax splitting open.  I opened it earlier than I otherwise would because of that.  Well, it was indeed soft, and very moist - perhaps a bit on the sticky side - but the taste was great.  Overall its a winner, but next time I won’t put anything on top of it.

LOL, well if it did well then do it again, however if its been waxed before its at the right dryness then it probably will be extra moist.

No, no pix - but I’ve hinted at a digital camera for Christmas.  Also, its the moistness that I wanted - its a welcome thing.
