Cheese Type & Number: American Brick; #9

Description: This cheese is a mold cheese, often called the poor man’s Limberger cheese because of its flavor. This is a new recipe and a new type of cheese for me. I ended up buying a second fridge for aging this cheese and the Stilton to keep the mold cheeses separated from the other cheeses.

We tasted this cheese on 3/17/2004. I wanted to try it because it felt so “soft and smooshy” under the wax. Actually, it is still reasonably firm. The flavor is GREAT, with a bit of “stinky cheese” to it. This one is a keeper.

We are still nibbling on this cheese 3 months later. I just keep it wrapped tight in plastic wrap, put it in a ziploc bag and keep it in a cold refrigerator. It continues to be a good cheese, perhaps improving with age.
