i had an rdo yesterday and i thought a perfect day to make a cheese i got the milk and thought i would make a colby so i warmed the milk transferred the pot to the water bath. im impatient when it comes to warming the milk so i do it on the stove its faster than the water bath put the messo starter in and went to wash my 3 small dogs while it ripened i forgot to check the temp of the bath i came back to it about 20 mins later to find it had heated to 50C i figured that wouldnt do the messo much good so when it cooled down i tossed in a couple of ice blocks of prepared buttermilk culture just in case i couldnt get a clean break but the rennet worked welland everything went smoothly after that except i raised the temperature slightly when cooking the curd and cooked it a little longer so0 now i dont know what cheese i made or how it will turn out so it will be a bit of a surprise if it turns out ok i dont think i will wax this one i might do a washed rind instead time will tell rolleyes

When the cheese turns out, and you like it, you’re going to have to change your story.  It should then be:  “I formulated a plan to modify a cheese recipe in hopes of accomplishing. . . .”  Now, doesn’t that sound much better?

i certainly will here is a photo it looks alright you cant ruin cheese too badly at least it will be edible at some stage confused

i have finally cut the noname it has a nice sharp taste and a bit holey but the texture is nice and smooth not a bad cheese considering i think it will go down quite well tongue rolleye

I see a pretty substantial rind under that wax.  So apparently at some point you decided to wax after all.  Is your texture real moist like a Colby?  It appears that way.  And - is it enough to your liking that you will be doing another along similar lines?

the texture is fairly dry and crumbly which is probably due to the accidental high temp more like a mature cheddar but a bit creamier noy so sharp
yes i will put it in my recipe book and make another. not a bad mistake after all thats what i love about cheesemaking LOL
