First of all, I hope I’m not violating any forum rules by posting this information. I’m not trying to steer anyone to a different forum (This was the first forum I joined and I do prefer it) but this really is a fantastic deal….

I also frequent another cheese making forum and one of the members there is offering a dual layer curd knife for sale for $100.00 or less, depending on the size. This guy is a master craftsman and makes these himself out of food grade stainless steel.
This knife will make both the vertical and horizontal cuts through all layers of the curd with a single pass, by incorporating vertical and horizontal wires in a half and half setup. I guess you really need to take a look at the pictures to see what I’m saying.
I’ve seen the plastic vertical only knives for about $38.00 U.S. + shipping on the web. No plastic horzontal knives offered that I’ve found.
I’ve also seen the stainless steel combination knives offered (like this guy is making) for about $950.00 U.S. + shipping.
He is trying to sell these but needs a minimum of 8 orders to justify his time and costs. He offers them in various frame dimensions as well as different cutting sizes. As for the cutting sizes he has both 1/2” and 1/4”.

Also, he is working on a press that is probably unlike anything else you’ve seen on the web. Basically this is a pneumatic press that will provide exact pressures without the pain of stacking and balancing weights over the mold. From what he is thinking he will be able to sell a stand alone product that will be comparable in price to the basic types of presses you’ve seen on the web.

Another item he is working on is custom cheese press followers. Using a CNC machine he is able to put an embossed graphic on the follower (mirror image) that will then press into the surface of the cheese. His prototype is one that has his name on it and in my opinion it is about as cool as it gets.

These are items that he has in the works but as for the knives he is offering them for sale now.

The only way to violate any “rule” on this forum is to be disrespectful to or somehow degrade another member. And, that has never happened here. As long as posts contribute to everyone’s enjoyment of and learning about cheese, I welcome it.
