My first Mozzarella turned out OK but not quite the texture I wanted.  I had a recipe using the microwave that I just had to try.  I won’t do that again.  I was way too rubbery.  Went ahead and made String cheese out of it for the kids.  I will definitely go back to the traditional method.

Terrie, the 30 minute mozz is never really that good. I don’t make the other version as it takes all day and I’d rather make hard cheese. But if you like mozz spend the time and make the one that takes longer it’s worth it. Plus I never find the 30 minute mozz can melt like regular cheese.
