A rat at my cheese!

Aargh!  I made a parmesan cheese & put it in my “humidor” last night (a glass pan with saran wrap over the top) - went to the cellar today to flip it, and it had a sizeable chunk munched out of the top. Now don’t gross out-but after all that work and 2 gallons of expensive raw milk, I cut off the chewed part a put it back in the brine for a purifying bath (hopefully).  any thoughts on what will happen to the cheese now-will it age properly? 10 months from now my family’s demise may be on national news for eating this cheese. you all can say I told you so, or maybe I’ll take your advice, and throw it away.confused

dont see why not unless a new bacteria body has been introduced, rubbing down the surface with salt might help. Make a cake for the cheese if u have uninvited guests.
