American cheese

I have been asked by several people to make an American cheese.  While I consider this to be almost beneath the dignity of an artisanal cheese maker, I may just give it a try if I can come up with a decent recipe.  I found this very vague recipe on the web:

I believe with minor adjustments that is the recipe for a Farmhouse Cheddar. If not, it’s so close your ‘customer’ won’t know the difference.
I have one which will be ready next weekend, packed in a vacuum seal, still looking good, been there for a month.

If your selling cheese make sure its legal or u know the individual very well, u might be inviting allot of politics.
