Hi guys….
This information was posted on the other cheese making board I frequent and in my opinion it is very good information.
I cannot take credit for finding this site. One of the newer members found it and it’s really a good read.
Here’s the link:

http://www.isleofmullcheese.co.uk/jalldridge/jaindex.htm

I’ve read through it once, but plan on spending quite a lot of time digesting the information.

Hopefully this will be a help to all of us in our cheese making endeavors.

Just had time to skim through it this A.M.  Will dig in later, but it appears to be some good food for thought.  Thanks for the research Dave, and whoever turned you on to it.

Nice resource, Dave.

It reminds me of another one I found some time ago.  I will see if I can dig up the link.

Tom,
Welcome back to the real world. grin
Honestly, you have been missed.
If you find that other link, please post it. I really want to read everything that I can on the art of making cheese.
I don’t know if I will ever master all of the ins and outs of this hobby but I do know that each year things get a little better.

Dave, I found the other reference that I was referring to and not only was it similar, it was EXACTLY the same.  It was posted in 2006 by an individual who I understand is now deceased.  I have to wonder did one of these two guys actually write it or did they find it somewhere else even earlier?

Anyway, it is good information albeit communicated in a very obtuse manner.

Tom,
Just curious..
Was this gentleman’s name Rick VonTrease (or something like that?). There is another site on the net…something like sausangemaking .org that has a cheese site that he hosted.
The reason I ask is because he is now deceased but posted some really great cheesemaking information.

Yep…that is exactly it.  There are some great nuggets of info on that site.  I think it is forum.sausagemaking.org.
