Baby Swiss

I made yesterday my first baby swiss wheel

it is a shortcut to traditional swiss, and it is very similar to Gouda (washed) with one difference , room temp againg

it is now in brine, and it already start to swell

will keep u updated with this nice cheese

If you are willing, I would like to know your recipe source for Baby Swiss. Or if it’s your own concoction I would like to know your formula if you are willing to share. Baby Swiss is one of my favorite cheeses.

Thanks a lot! Going to be about 55 F here in Idaho today. I am breaking out the sun glasses. Most of my garden is now planted except the most tender plants.
