I follow this very easy receipt and i ended up with best mozzarella i ever made…

still i want it to be more moist and softer .... i do not know how ....

Nabil,

I heat my mozzarella in a microwave oven not in water, for me it looks more efficient.
As for “more moist and softer”, dry less the curds and strech less, that should help.

my proposal is:

1- use lower temp in all stages
2- use more cream (raise the fat percentage)
3- stretch less as u said

i will give it a try
