If there is anyone on the forum thinking of a day with Ricki Carrol at her 101 Cheese making, then do yourself a favor and forget it.
Her web site states a maximum of 12 at a time. False advertising of the worst kind.
There were 40 of us crammed in a 20x25 foot room, with all the ‘heads’ it was impossible to see clearly, and individual attention was sadly lacking.
At $150 per person it is grossly over charged, but a superb money maker for Ms Carrol. Works out at $12,000, plus the extra in sales, every weekend throughout the summer.
For a company in the cheese production and promotion business the only samples of ‘hard’ cheese were some miserable ones she had ‘imported’ for the occasion.
An expensive serious disappointment, and one I do not recommend.

grin cool smile grin Let’s fly together, on the other hand, I don’t think we really need Ricki Carrol to make good cheeses.

About a month ago I’ve received 4 books purchased at: http://www.bookdepository.co.uk/WEBSITE/WWW/WEBPAGES/homepage.php

They are the cheapest and ship worldwide for free. I checked against “Amazon” and Abe’s Books”.

The books:

1. CHEESE PRIMER by Steven Jenkins (wouldn’t buy)
2. THE FRENCH CHEESE BOOK by Patrick Rance (wouldn’t buy)
3. FRENCH CHEESES by Kazuo Masui & Tomoko Yamada (mostly recommended)
4. CHEESE MAKING PRACTICE by R.Scott (mostly recommended)
