Recently bought 200 Easy Homemade Cheese Recipes, a new book (came out in March) by Debra Amrein-Boyes. The author is a well-known Canadian commercial cheesemaker. It’s not for the beginning cheesemaker, but it is a GOLD MINE for anyone who has been making cheese for a while.  Good recipes for all the common and not-so-common cheeses are there but also MANY hard to find recipes-e.g. bocconcini, caciocavallo, scamorza, St. Marcellin, Selles-sur-Cher, Blue Pyrenees, Septmoncel,reblochon, morbier, leiden, raclette, tomme, fontina, etc.  I’ve made about 25 of these cheeses , and the recipes for them in this book are clear, complete, and workable. My only complaint (so far) is that the book is a little more high tech than it needs to be.  But I can’t wait to make some of these cheeses!!!  List price is $24.95.  I got mine from Amazon for less. Highly recommended!

Just got my copy from Amazon. This is a GREAT book. All of her recipes are in “American” as well as metric. She even gives some recipes for LARGE batches. Not a technical reference but fantastic recipes, many of which I haven’t seen anywhere else. Well worth the money.
