I made another batch of Manchego a couple weeks ago, and this one is flavored with oregano.  For a 4 Gal. batch, I used 2 heaping teaspoons of dried oregano.  The taste is good:  mild, not overpowering.  It will likely be an occasional cheese from now on.

Sounds great !! been wanting to do that as well, including basil.
