Well, its rainy and cool today; and even though I have lots to do, the weather precludes most of it. So, its a great day to make a traditional cheddar. I really enjoy the process; and its a wonderful way to pass some hours. I started at 7:45 this morning and now, 6 1/2 hrs later its in its first press. Everything has gone perfectly to this point and I’m looking forward to a terrific cheese. I recommend it as a sure cure for a boring day.
