I have made a number of Camembert over the years and always get in a bloody mess when moulding the wheels. Especially when trying to peel the mats off the curds. Not any more, I have come up with an alternative to the mats and cheese boards which makes life so much easier, I have to share it.
I recently made a number of 4 inch moulds out of PVC pipe, at the same time I made a number of followers out of a PVC cutting board. You can drill as many 1/16th holes as you feel necessary in both followers and moulds.
Take a follower, cover it with the mould, fill the mould in the normal fashion, then add the second follower.
When you want to flip, slide a finger under the lower follower, hold the top one and flip the whole ‘sandwich’.
You’ll find the curds will slip down the mould with the follower above, adding slight pressure on the curds.
After one or two flips I remove the top follower which gives me access with a paper towel to start the drying process. You’ll find that PVC does not stick!
Simple, but very effective, and far easier than the ‘standard’ way of doing things.
