I had the pleasure of trying a Wenslydale with Cranberries! Oh boy, was it ever good.
Does anyone have a recipe for Wenslydale?
How would you add Cranberries, cooked down to a stiff syrup and strained? Or how about dried?
At $8 for a few ounces it would be worthy of experimenting.
Don’t have a recipe for Wenslydale, but assuming it has loose curds at some point, I’d just put the well drained fruit into the curds and mix gently with my hands, then form and press. You might check with Wallace and Gromit

The book is very useful, lots of recipes.
I followed the Wenslydale to the letter and produced two 1 lbs cheeses. One I added dried Cherries to, which produced a round with a mottled look. I assume it was partially juice from the Cherries.
The second one I used dried Pineapple. That one looks very nice. Both are vacuumed and in the cave. As they’re ready in 1 month it won’t be long before we can try them and report the results..
