Burratta

hi everyone,
I am new to forum and fairly new to cheese making.  I only make mozzarella and ricotta -for now!  I really want to make Burratta cheese,has anyone made this and if so can you give some pointers?

thank you Neil.  That was a nice write up and interesting site that for future reference.  I just wish I could find out if the cream is cooked or whipped first or not,that is the only part i am unsure of but the most important. smile

Thank you so much.  I am anticipating learning alot from all of you!  I really want to get into some hard cheeses,I am a bit afraid of it though.  All of you here are a definate inspiration…

I know what you mean by being afraid of moving into hard cheeses; I was reluctant myself and put if off for quite a while.  But one day you’ll decide to take the plunge, and you’ll find that its very much like cooking.  You just follow the recipe one step at a time.  Technique will come with experience, and even your failures will likely taste pretty good.

Welcome! I don’t know about the cream being cooked or not, as I haven’t tried making it either, but if you make it I recommend making a big big batch. smile I recently discovered burratta and think maybe it’s one of those things that exists in the world to test my powers of restraint. The concept is just too yummy: CREAM surrounded by CHEESE: yes, please! Make enough to share with your friends who will be knocking on your door ready to eat it all.
