Ingredient substitute?

I’ve finally decided to go ahead and make some Mozerella.  I know, I know, I should have made it a very long time ago; but procrastination is an art with me.  Anyway, I thought I’d start with the citric acid recipe; but I find I have no citric acid.  Can I substitute vinegar, or do I need to wait for the real thing???

I wonder if you could use vitamin c tablets or lemon juice as well?

Lemon juice , however depending on the season will depend on the streangth. Lemon juice is about 5% citric acid.

Well, I made the Mozzarella last week using vinegar - and I learned something.  It doesn’t work very well.  I did get a cheese from it; but it was rather tasteless, and not of the right consistency.

I now have the citric acid and I made another batch tonight using that.  The difference was phenomenal!  I ended up with a super stretchy cheese which tastes pretty good - considering it was a shortcut recipe.  So now I’m glad I finally got around to trying it.  Don’t know why I put it off so long.
