Raw Goat Colby

I just cut into an 8 month old wheel of raw Goat colby.
I think I hit a homerun with this one.
Too bad for me, I don’t know where to get raw goat milk anymore.
I will definately keep looking for some.

contgratulations.  Colby is one of my favorites to make - and eat.  I haven’t had any made from goat’s milk however.  How would you compare it?

I used Ricki Carroll’s recipe.
How to compare?  Hmmmm. hard to say.
My first cheese I made was a cow colby.
It was a little dry and crumbly.
The Goat is a little softer and good saltyness.
I took 1/2 of a 2 lb. wheel to a home winemakers club meeting and returned with none.
And got lots of compliments.
