I went with the cajeta. A Rick Bayless recipe. A key ingredient in a cake made of cajeta, chocolate/coffee flavored cake and a custard all baked together. It is in the oven. Smells delicious.
I have a Pepper Jack going today, a Sage Cheddar tomorrow and just could not do another cheese. Although, the cajeta takes a couple of hours of careful minding, stirring, and watching. But, it turned out great! Better than any store-bought dulce de leche or cajeta (which I can’t find in NJ.)
