I just came by 1/2-gallon of fresh raw goat’s milk. What do you suggest I make with it?

You may want to make one Cam if you like it. It’s a very lttle amount of milk long face .

3 liters of milk? It’s my basic recipe for 2 Cam’s.

A single Camembert sounds good. I’m already planning on a sage Cheddar and a pepper Jack. Maybe I’ll make cajeta instead and use it in a nice flan-based dessert. Don’t always have to use milk for cheese, you know!

I went with the cajeta. A Rick Bayless recipe. A key ingredient in a cake made of cajeta, chocolate/coffee flavored cake and a custard all baked together. It is in the oven. Smells delicious.

I have a Pepper Jack going today, a Sage Cheddar tomorrow and just could not do another cheese. Although, the cajeta takes a couple of hours of careful minding, stirring, and watching. But, it turned out great! Better than any store-bought dulce de leche or cajeta (which I can’t find in NJ.)

Ok, I’m too late and what you did sounds yummy, but if I had that milk I’d just drink it. Mmmmmm
