I had such great success with my last Gouda that I just had to make another and try to duplicate the results.  If I achieve consistency in this, I’ll be quite happy.  I switched to MM100 starter culture for this cheese, and the addition of a pH meter has given me greater control over the process.  I’ll keep you posted.
