I’ve always heard 60 days; but I have to confess that I have partaken of cheese that is less than that.  If you’re secure in your milk source you may be more confident.

$6.00 a gallon in a state certified clean dairy in central Tx. last weekend.
Some decent summer rains this year so the cream level in the milk is decent.
That means that there is green grass in the pastures.
That is very important to the quality of raw milk.
Feeling lazy, I went for a Montery Jack recipe today.

“Certified clean dairy” sounds like the norm is not clean dairies.
Good rains def means good grass smile
