Figured I’d share my first hard-cheese creation: Stirred Curd Cheddar! It was such a blast to make, now for waiting patiently for 6 months! Thanks for all that have shown support and answered questions I’ve had on this forum so far!

The wheel looks good.  Fairly nice color (how much coloring did you use?), and a good tight knit.  BTW, unless its a personal desire to do so, you don’t have to wait 6 months.  It’ll be pretty good in as little as two.  But if you can hold off longer, that will just add to the flavor.  For my own taste, I find that 4 months works out to a nice sharpness. 

Nice wax job too!  Keep an eye out for cracks over time.

I didn’t use any coloring at all. We used raw milk (hence the 6 month aging).

I use raw milk also.  Even so, you only need to age for two months to be safe.

Ah OK. For some reason I recall reading that 6 months minimum for any bad bacteria to die off. Either way, I’ll most likely lose the patience game and break it open around 4 months =)

Nope, that’s not the problem.  I cannot view embedded links to pix hosting sites.  They are blocked by company server.  Pix that are attached directly to this site via the attachment link, I can see.

Still something weird going on. In the original post the photos were embedded in the post, not a link to an alternative site. So you should have been able to see them?

I hate to flog a dead horse, but you must be accessing a different area than me. I don’t see any mention of a photobucket link, just the photos in glorious technicolor and full size. Strange!!!

If you go to VIEW in the browser menu, and click on the page source, you can see the actual page source html code.  If you look through it you will see that the image was posted via photobucket links.
