I went to the Dekalb World Market today where you can buy all kinds of things from all over the world. The place is always packed.
I bought several different types of cheeses that I have never tasted before, but read about. I got English Stilton, a Havarti with garlic, red peppers and dill, a gouda, a goat cheese camembert, and a sage derby.
I wanted to buy the sage derby because I have read so much about how to make the Irish Porter cheese, and I think that the sage one is made the same way. It looks wonderful when you slice it, with chunks of white curd and the green curd mixed in between, but I don’t like the sage flavor in the cheese.
I have tasted all of the cheese except for the camembert, and they were all good.
However, the fancy crackers that I bought were a waste. I ended up eating my cheese with a Keebler Toasteds Wheat cracker.

They had an Asiago that cost $110 for the 1/2 of the wheel. My husband was shocked. I bought small pieces of cheese that cost $10 lb, I didn’t get anything more expensive than that. There are hundreds of cheeses from all over the world, but I could not find any Beemers or the Cahill Irish Porter. I have seen the Beemer’s there before, but they didn’t have any today. I have never seen the Cahill Irish Porter. Until I started making cheese and reading recipes and reading the forums I didn’t know what most of the cheese at the store was. Today I actually had a theory when I read the names of how they were made and how long they had aged and what the flavor might be.

I bought some Port wine to make a cheddar port out of. I have read a lot about them on here so I have a theory as to how to proceed so I’m going to try one.

It’s just amazing to go to the market where they have produce, meats, seafood, cheese and sausages from all over. It’s an all natural store, so you can’t buy Cocoa Puffs there, but they have crackers from India and rice from everywhere you can think of. They dry their own herbs and put them in little plastic containers for sale and they are great. Of course I dry my own so I only buy theirs when I’m out. You can get fresh seafood. You can stand in the line and pick out a fish and they will clean it and fillet it and hand it back to you. You can even get fish heads there, if you want some. They also make their own fresh sausage there. You can get beef sausage, or chicken, or turkey, or pork.

The deli is amazing with all of those fancy Italian foods. I can spend a fortune in there in the summer buying fresh vegetables to can. I can my own vegetables, make and can my own beef broth, chicken broth and seafood broth, grow my own herbs and peppers and dry them. Cheese just seemed like the next logical step.
