Its been a very long time since I have made any cheese.  My cave fridge went out on me, and I lost 7 cheeses.  Well, my loss was my chicken’s gain - they loved them.  Any way, I have everything back in order again and I made a Colby this morning.  Its good to be making cheese again.  It felt as though I was a bit rusty, so I had to pay pretty close attention to my recipe and my pH meter; but all went well, and its pressing overnight tonight.  I’m not going to be waiting too long to crack this one, as I’ve been suffering cheese withdrawal.
