Making cheese out of the leftovers of Ghee ?

Necessity is the mother of invention. I have been into Ghee making… and we have lots of the milk solids leftover. We cannot imagine throwing it away. Have found recipes for an Indian dessert to make, and of course some folks just slap it on bread. Of course I like the idea of preserving it as a cheese. If someone out there has an idea or recipe , I would be so grateful.

I looked up what ghee is, and I have been watching to see if anyone posted anything. I’m thinking nobody knows how to do this. Keeping in mind that I never heard of ghee until now, I’ve been thinking about the cheese part. Making the cheese requires the whey, and I’m thinking that since you have milk solids that you can’t make cheese from that. How fast you heat the curd in the whey, or how high you heat the curd in the whey, are all important factors for how much moister the curd absorbs. So I’m thinking no whey, no cheese.

Hey Anna,

Don’t be a stranger.  I’m assuming from your post that you are interested in making cheese.  Go for it.  Its fun, and it’s rewarding in the culinary sense.  Do you have any of the necessary equipment?
