olive oil, mix 50/50 paraffin and bees wax. Salt wash, lard on cheese cloth.
The Cheese Hole
olive oil only ? how ? how many times? what is exactly the type of LARD?
repeated wiping of olive oil creating layers, don’t have the instructions handy. Lard is what they used in the “old’ days, usually pigs fat, not something I would personally recommend . I would use olive oil/wax/salt for preservation.
Regarding oil: is the oil Olive a good choice for oil , when u apply oil ? and how many times?
Regarding salt: u mean light brine solution , u wipe the cheese with it, how many times ? and for how long? i think the surface will crack at the end
it all depends on the cheese recipe/process, u need to follow the instructions for the particular cheese u make. The oil/salt creates a “crust/rind”.
If you bandage a cheese you don’t need wax do you? Is it just strips of cheesecloth and then you let the natural moulds do their funky thing?
Samantha
The cloth is coated usually with fat.
Hmm.
If I got food grade parrafin and pure bees wax mixed 50:50 will that be OK?
yes
any idea how much wax it takes to coat say 1kg (2lb) of cheese?
Very little wax, usualy three layers are enough, each layer consume very little
example: three wheel of 1.5KG each consumed less than qurater pound (qurater of 0.5 KG) you calculate it
this is movie, it is the last in the bottom http://biology.clc.uc.edu/fankhauser/Cheese/CHEESE_MOVIES.HTM
Any one know how can i reuse the cheese wax after i removed it from my used wheel?
how can i refilter it, and reuse it? without adding fried tiny cheese (after used wax melting) which will not produce contamination to new cheese
Cheers
just reheat it to the point of sterilization and pour over a sieve.
metal sieve ? like tea ones?
yup, I have a 3” diam one I used for bees wax
