Hi everyone, I tried my hand at fontina about 2 weeks ago. I wasn’t able to do the brine wash as frequently as it called for since I was on vacation. So I have these blue mold spots and a brownish smear. The brown comes off mostly with the brine wash but the blue mold is more difficult. Is it okay to cut out what doesn’t wash off? Or will it come out eventually with more brine washes? Thanks again for the help.

U might end up with blue cheese lol. The “Washing” normally creates a orangey colour. Try giving it a salt rub then start over with the washing and see what happens, or nuke it with a vinegar wash and it willl wipe all bacteria, however u might not get the wash effect after that.
