Mozzarella made from citric acid has no flavor to it, it tastes like the milk you made it from.

A strange thing happened to me today. I made pizza useing citric acid mozz made a year ago and kept in the freezer. I tasted the mozz and it had a very-very slight sort of sharpness. To be honest, I am very surprised.
