First, Merry Christmas to all of you and your families.

Second, where the heck are you???  I haven’t seen a post since November!  Let’s get with it.

Third,  I opened an 8 month old Leicester and it’s terrific.  Nicely sharp, not too dry, good texture.  Since my wife doesn’t care for sharp cheese, I’ll get to eat most all of it myself.  Now there’s a Christmas present!!

So, what’s happening with y’all.

My cheese making has slowed since moving a few years ago. I still maintain this forum and like to read about everyone’s experiences, and I still learn a lot from your questions and insights. I’ll be starting up again soon, so let’s keep the community going!
