Looks like Friday has become my cheese making day. Today I figured I was due for another cheddar. I wanted to have several of them on hand so I could let a few age long time. I really like a very sharp cheddar. I got to thinking about Vermont White Cheddar. It’s a patented name, so I can’t very well use it. So I decided to make an ABC cheese - Arkansas Blonde Cheddar! My milk is a bit too creamy to make a really white cheese anyway; but it’s a terrific blonde. And, after all, blondes have more fun!
