Acid flavor in cheese???

I made some Colby 3 months ago. It was a little moist when I waxed it. I opened it and it has an acid taste to it.  Can someone tell me why??

Ok, just found out leaving to much whey will cause this. Going to try drying it a little more.

Yes, it needs to be dry to the touch before you wax it.  If you use coloring, the color will appear significantly darker as it dries.  And be sure to give it a dry salt rub before waxing also.  This will help prevent any mold growth under the wax.  I’ve worked on my Colby for a long time and I finally got it right, IMHO.

How long has it been since you waxed it?  The problem is that if there’s too much whey in the cheese, it will tend to spoil.  The acidic smell sounds like an indication that that has already begun.  I’ve never tried to re-dry a cheese; but I’d say it was worth a try.  I don’t think it will turn out well the way it is now.

Been about 3 months since it got waxed. I will dry it and see what happens.

3 months is a while, hope you can save it.  I was wondering, though, how you managed to smell it if it was waxed?  Perhaps you have small cracks in your wax - which may have caused the off odor to start with.

I assume you gave it a taste when you opened it to dry.  Was the taste acceptable?
