I had it all planned.  I was going to make Pepper Jack this morning.  Unfortunately, I had a mental lapse when adding culture, and instead of using MM100, I inadvertently added thermophilic culture.  I didn’t notice my mistake until I was putting the culture packet back into the freezer.  So, my pepper Jack is going to end up as a Milano Jack.  I guess I just invented a new cheese.  In a couple months I’ll let y’all know how it turns out.  I hope the Italians aren’t offended too badly.
