Flavoring Feta

As u can see I have gotten quite good at making feta. Now I want to expand and make flavored. Not just flavor added after the fact but during the making of the cheese. Tonight I am going to make a garlic and oregano feta but I am going to incorporate the garlic and the oregano into the curds after I drain them. Then I will press it at 10lbs overnight. Be interesting how it will taste and how it will affect the texture. I googled it but nothing and found nothing here on the forum. Anyone here done this let me know how it turned out and what different flavors you tried. Hot peppers would be nice also…I’ll post the pics and my opinion tommorrow…..

We have talked about it before, not maybe for Feta but for other cheese as to what our favorite additive is. The oregano would be a nice addition, I try and use the Greek one that come on the branch.
