Cloth Banding

I cloth banded a cheese a while back and when it molded up, I removed the cloth, the cheese was fine, and I waxed it.

I decided to do it again so I cloth banded a Monterrey Jack cheese because the recipe said that was how they did it, and now the cloth is all covered with mold. I read somewhere that this is normal, that the cloth molds up, but the cheese does not.

Can someone confirm this is what is supposed to happen? If I need to save my cheese now by unwrapping it and waxing it I will, but if this is normal I’d like to leave it alone.

I covered the cheese in a vegetable shortening so I’m hoping that the shortening protects the cheese while the mold has a good ole time with the cloth.

Yup its common unless u use preservatives like a cream. Salt is still the all round best preserver.
