Having switched to milk from a Jersey cow instead of Holsteins, I’ve noticed a significant difference in yield. My wheels are definitely larger. Unfortunately I never weighed any of my previous cheeses; but I’ve started to weigh the recent ones. I was under the impression that a good yield for a hard cheese was in the neighborhood of a pound of cheese for a gallon of milk. Well, I’ve been regularly getting over 5 lbs from my 4 gallon batches. Today I took a Colby out of the press and weighed it - it came in at 5.7 lbs! The only thing that I can offer as an explanation is that Jersey’s have a much greater percentage of cream in their milk. In any case, it’s terrific!
