Opened a Jack wheel tonight. A little to dry but not bad. Should have waxed it sooner. Do the mold covered cheeses retain there moisture better or is my blue getting dry as I write this? Humidity in the fridge is 75%.

Keep it in a waxed wrap or in a proper humidity chamber.
