Did a 18L batch yesterday, feels like it worked, will see in 4 months :D pulled it out of the brine this morning.

Cracked my first Gouda just now. I was very surprised, it had a great creamy taste of Gouda and then some, glad I aged it more. melts nicely too. very clean taste. Big smiles, having them now on taco chips LOL.
