This is my current Stilton 12 days into maturing, the white mold appeared first and now the blue is starting to bloom.

It is now at the 5 week mark, I have kept the cheese at 8c and a RH of around 85-90%, and I have now needled it. I am really looking forward to tasting this one, judging by the samples I tried when needling the texture and aroma are almost Identical to the imported Stiltons I have tried.
