The andrastina, explained Juan Francisco Martín, was discovered in a study made in Japan one decade ago in search of antitumorlike; later was the presence of this bacterium in the blue cheese like a component more of the mould penicilum roqueforti, that gives the color characteristic to the cheese of the valley of Valdeón. This bacterium inhibits farnesiltranferasa of the oncogénica protein EVENNESS, which causes the alteration of its cellular location and biological activity. The proteins EVENNESS, explained the microbiologist director of the study, are oncogenes more commonly associated with the cancerigenic processes since they have been discovered, in their mutada form, 50% of the colon tumors and in 90% of those of páncreas. In fact, it added, the antitumorlike therapies are directed to act in the destruction of that protein that allows the growth of the tumor.
The study on the antitumorlike one was the second part of a report on the components of the cheese of Valdeón ordered by the Queserías company Tips of Europe. First stage of the report revealed the general quality of the product and alerted to the investigators on the presence of the antitumorlike one what gave foot to one second investigation, in march, still financed by the Delegation of Leon for the determination of the anticancerigenic one and to a scholarship of investigation (also financed by the provincial corporation) to study the penicilum roqueforti that grows in the cheese of Valdeón.
“It is a scientific study that is next going to be published”, it stressed the director of Inbiotec that goes next to Elbe Mauriz Garci’a to it. A study, stressed, that guarantees that the “content of andrastinas in the cheese by gram is significant, the sufficient thing to have a protective effect” and enough so that, from now on, the cheese of Valdeón can be considered a food functional, “with beneficial effects for the health”.
Tomás Alonso, manager of Queserías Tips of Europe, indicated that the company is going to present in the labels this antitumorlike property the cheese. “It is for us a satisfaction to know that we not only give a quality product but who also we are giving to our clients a product that benefits its health”, it indicated.
The scientific work was presented/displayed yesterday in an act in the Musac in the course of a food tasting prepared with plates elaborated solely with the blue cheese of the valley of Leon like raw material.
Inbiotec will continue until end of this year with his second line of investigation of the blue cheese, a project that will allow to design a method of detection of andrastina in blue cheese samples, more trustworthy and sensible than the employees until now.
