Melting

I used some of my Farmhouse Cheddar in a potato soup, but it wouldn’t melt.  It that normal for that cheese?  I thought all cheese should melt.

That is one of the topics we covered, its all to do with PH, not attaining it and the cheese being too acid for it to congeal :(
